Pork Tacos!

Utilized my pickled onions last night for some pork tacos.
Pork Roast dry rubbed in cumin, chili, red pepper flakes and a little taco seasoning packet I had left over.
Seared on the grill then covered with green chiles and 2 fresh squeezed oranges.
The pork was just a little over 2lbs so I baked it at 350 degrees for about 45 min. I like my pork a little bit pink and this turned out perfectly juicy.

For topping the pork tacos I made a red onion, radish, cilantro, jalapeno, lime and pickled onion slaw.
Grilled corn with cotija cheese and lime along with some mexican style coleslaw.
The coleslaw is similar to this recipe, but I got a few tips from Lauren at fork and fig to make it tastier.
In the slaw I added red peppers and celery and for the dressing cumin, jalapeno and vinegar. For me it’s all about using up whatever is on hand and sometimes on it’s last leg.
